1 medium butternut squash, peeled and diced
1 tablespoon olive oil chopped or dried thyme
Small jar of tomato pasta sauce
85g hard goat’s cheese, diced
2 tablespoons chopped flat leaf parsley (or dried)
2 tablespoons pumpkin seeds
Grated cheddar cheese
1. Heat oven to 180°C.
2. Put the diced butternut squash onto a baking tray, drizzle with oil, add the thyme and mix. Season well and roast in the oven for 30 mins.
3. Mix the squash with the tomato sauce, goat’s cheese and parsley, and spread into a dish.
4. Mix the seeds and cheddar cheese
