Robin's Recipes

Our head chef, Robin, shares with us his top-secret chocolate cake recipe! Robin is renowned for making this particular chocolate cake for any occassion we are celebrating at Martin House. Happy baking and let us see your creations by tagging us on social media!

Chocolate mayonnaise cake
 
10oz self-raising flour
1½ tsp baking powder
4 tbsp cocoa powder
1 tsp vanilla essence
8oz caster sugar
7oz mayonnaise
8 fl oz boiling water 
 
For the icing

4 tsp instant coffee
4 tbsp cocoa powder
4 tbsp hot water
6oz margerine 
1lb of icing sugar
 
Method

1. Preheat oven to 180°C (Gas Mark 4)
2. Line two 8-inch cake tins
3. Mix together the flour, sugar, baking powder and mayonnaise. Dissolve the cocoa powder in the water. Stir into the cake mixture with the vanilla essence. Divide between the two cake tins and put into the oven for 35 mins. Cool in the tins before removing.
4. For the icing, dissolve the cocoa powder and coffee in the hot water. Cream margerine and icing sugar together. Add the cocoa mixture to it. Sandwich the cake together and spread the remainder over the top of the cake. Enjoy!
